Seafood Gumbo Soup Recipe

What is Gumbo? Gumbo is a classic Cajun communal stew that is especially important around Mardi Gras. What is Roux? There is only one rule that remains constant in making gumbo:

First you make a roux. The roux, a flour and oil or butter mixture, which acts as a thickening agent, is the gumbo's base. There are no other hard-and-fast rules for the ingredients used in making gumbo.

 

Here's a recipe for Seafood Gumbo soup:

Main Ingredients

 

3 Flower Crabs a.k.a. Blue Swimmer Crabs
300g Clams
120g Scallops
230g Crayfish
1 can minced clams (reserve the juice)
1 tbsp (14 g) butter
2 tbsp plain flour
3 cloves garlic – chopped
1/2 yellow onion – diced
1 red or yellow pepper – diced
1/3 cup tomato paste
1 tbsp white wine vinegar
Salt & pepper
Coriander or Chinese parsley (optional)
 

Prawn Stock Ingredients

 

1 stalk celery with leaves- diced
1 medium carrot – diced
Prawn heads and shells from 12 medium-sized prawns (rinse the prawns before peeling)
1/2 yellow onion – chopped
1 bay leaf
A pinch of dried thyme
4 cups water
Vegetable oil

 

Instructions

To make the prawn stock, drizzle vegetable oil and fry the prawn shells in a medium-sized pot for approx. 30 secs. Add in the rest of the ingredients for the prawn stock with 4 cups of water. Bring to boil and let it simmer for 30 mins (low heat). Drain the stock with a strainer and set it aside.

In a cast iron oven or large pot, melt the butter and add in flour. Cook the butter and flour at low heat, stirring constantly for 20 to 25 mins, until you get a golden brown colour. Turn up the heat to medium and add the chopped vegetables to the roux and cook until soft, approx. 2 mins.

Add in prawn stock, clam juice, white wine vinegar and tomato paste and bring to boil. Simmer for another 30 mins, stirring occasionally to prevent sticking. Add 1/4 cup of water if it is too thick. Taste and season with salt and pepper accordingly.

Cut the crabs into half or quarter sizes. Gently place them in the prawn stock. Lastly, add in all the seafood including the peeled prawns, cover and cook for 10 mins. Add coriander and turn off heat.

Instead of rice, you can have it served with quinoa! You may also add Tabasco sauce if you like.
